The best recipe for Zucchini bread

It's that time of year! My squash plants haven't been as fruitful this year, but even so, I suddenly find myself with a lot of zucchini. On top of that, a little vacation for a few days out of town, yielded me one that seems big enough for the Utah State Fair. I don't mind a bit though. As a matter of fact, I look forward to it each year so that I can fill my freezer with loaves of the best Zucchini Bread Recipe I've found.

The original recipe was written on this blog back in 2009, but I've adapted it a bit by swapping out some healthier ingredients. Either way you make it, it's sure to please. You can munch on it right away or freeze for up to 3-4 months. Did someone say Christmas Baking?

The Best Zucchini Bread Recipe – Traditional and Healthier Alternative

Traditional:

1 cup white sugar
1 cup brown sugar
1 cup vegetable oil
3 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons nutmeg
3 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
2 1/2 cups grated zucchini (about 1 extra large 12″ or two smaller size)
1 cup chopped walnuts

Healthier Alternative:

1 cup white sugar
1 cup whole brown sugar (I like Simple Truth sold at Smith's or other Kroger stores, it's made with raw sugar is just delicious)
1/2 unsweetened applesauce
1/2 melted coconut oil (note: I use unrefined or virgin, which adds a distinct coconut flavor, see the differences here)
3 teaspoons vanilla extract
3 cups all-purpose flour
1 whole nutmeg grated
3 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
2 1/2 cups grated zucchini
1 tablespoon grated ginger
1 cup chopped walnuts

Directions:

1-Grease or line two 8 x 4 inch pans or 6 mini loaf pans or 2 (12 ct) cupcake pans. Preheat oven to 325° degrees F.
2-Beat eggs, oil, applesauce, vanilla, flax seeds, and sugar together in a large bowl.


3-Sift dry ingredients to the creamed mixture, and mix well.


4-Grate zucchini (if you are using a large oversized zucchini seed it before grating). Stir into the mixture along with the nuts until well combined. Pour batter into prepared pans.
5-Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. My mini-loaf pans take about 30-40 minutes. Large sized loaves take about 55 minutes. Cupcake muffins take 20-25 minutes. Cool in pan on rack for 15-20 minutes. Remove bread from pan, and completely cool.

  • 3 teaspoon Vanilla Extract
  • 3 Eggs
  • 2 tablespoons Flax Seed optional
  • 3 cups All Purpose Flour
  • 1 1/2 teaspoons Ground Nutmeg (alternatively use 1 fresh grated whole nutmeg)
  • 3 teaspoons Ground Cinnamon
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 2 1/2 cups Grated Zucchini
  • 1 tablespoon Grated Ginger optional
  • 1 cup chopped Walnuts optional

How to store Zucchini:

To store zucchini wash and allow to dry completely. Then put inside a loosely closed plastic bag. I've had zucchini last for up to 3 weeks this way. Don't cut up the zucchini until ready to use.

How to freeze Zucchini:

To freeze zucchini for later use, wash and grate coarsely or cut into 1-inch chunks. Lay out the zucchini on a sheet pan lined with parchment paper and freeze. Break up and store in a plastic freezer bag or seal in food sealer bags.

    Xela- thank you! I'd love to say I have some high-end camera…but I don't! It's an old Konica Minolta Dimage Z2 that we bought used off Ebay about 5 years ago! It's just a point-and-shoot! My only trick is this- natural lighting is awesome!

    We do have a newer camera that we bought at Costco- we got a great deal!
